The oldest standing example dates to 1610. Adobe does not weaken with age, and what separates a surviving house from a lost one is almost never the century it was built in.
Ancient adobe houses and where the tradition starts
Ancient adobe houses in North America predate European contact.
Puebloan builders in the Southwest worked in coursed earth long before the Spanish introduced the wooden brick mould in the sixteenth century.
Taos Pueblo is the clearest case. It is an inhabited community rather than a ruin, with occupation running continuously into the present.
The oldest documented examples
The Palace of the Governors in Santa Fe was begun in 1610 and remains in use.
San Esteban del Rey Mission at Acoma was completed in 1629 inside the mesa top village.
Both are earthen walled. Both have been maintained without interruption, which is the actual reason they are still here.
Why some lasted and others did not
Adobe fails by water, not by time.
A well maintained nineteenth century adobe is in better condition than a neglected eighteenth century one. Where this catalogue records ruins, the cause is generally an abandoned roof rather than an old wall.

New Mexico holds 58 documented properties and California 106, together most of the inventory.
Arizona has 21 and Colorado 16, with single figure counts in Nevada, Texas, Kansas, Utah, Florida, and the District of Columbia.
Around a quarter of the catalogue, 56 properties, now operates as a museum. A large share of the oldest surviving adobe is open to visit rather than privately held.
